This recipe is a must try! The flavor just aimed together so beautifully and the cheesecake just melts in your mouth!!
Crust Layer
Powdered Graham Crackers-1 1/2 cup
Melted Butter-1/4 cup+1 tsp
Cardamom Powder- 1/2 tspn
Line a springform pan with parchment and keep ready.Mix everything together till crumbly and then press the mixture in an even layer on to the pan and freeze it for 30mins.
Rabdi & Gulab Jamun Cheese cake layer
Hot Water-1/4 cup
Gelatin powder-1 tbsp
Cream cheese, softened- 1/2 lb
Powdered sugar-1/2 cup +2 tspn
Cardamom powder-1/2 tspn
Coarsely crushed nuts-2 tblspn ( almonds, pistachio and cashews)
Heavy whipping cream-1/2 cup (cold)
Gulab jamun- 10-15 cut in half. (Homemade or Store brought)
- Sprinkle gelatin powder over hot water in a heatproof cup. Stir until gelatin is well dissolved. Set aside to cool.
- Meanwhile, using an electric mixer, beat cream cheese and 1/2 cup powdered sugar until light and fluffy. Fold in cooled gelatin mixture. Add ground cardamom and mix. Set aside.
- Using an electric mixer, beat cream with 2 tspn powdered sugar until soft peaks form. Add this to cream cheese mixture and beat for 2 mins.now add the crushed nuts and saffron powder to it and gently mix.Pour half the mixture into prepared pan, levelling top with a spatula. Layer the cut jamun in an even layer. Now add the remaining cream cheese mixture on the gulab jamun and spread in an even layer. Now add another layer of cut gulab jamun and let it set in the refrigerator for 4 hours.
Honey syrup layer
Gulab jamun-8-10 cut in half
Hot water-1/4 cup
Gelatin powder-1 tblspn
Water-3/4 cup
Honey-1/4 cup
- Sprinkle gelatin powder over boiling water in a heatproof bowl. Stir until gelatin is dissolved. Set aside to cool completely.
- Place water and honey in a bowl. Stir to combine. Add cooled gelatin. Stir to combine. Pour the honey syrup over the set gulab jamun Rabdi cheesecake and let it refrigerate for at least 2 hours or until set.
- To serve, carefully remove cheesecake from the springform pan and cut into slices and serve chilled!!
