Instant Oats Idlis

This is a healthy breakfast recipe that is easy to whip up in no time.

Ingredients

Quick cook oats-2 cups

Semolina-1 cup

Greek yogurt-1/2 cup

Ash gourd pieces-1/2 cup

Green chilis-2

Ginger paste-1/4 tsp

Dill-2 tbsp finely chopped

Carrots- 1/4 cup shredded

Salt to taste

Almond meal-2 tbsp

For Seasoning

Oil-1 tsp

Mustard seeds-1/2 tsp

Cumin-1/2 tsp

Curry leaves-10 finely chopped

Heat the oil, add the mustard seeds and let it splutter.Now, add cumin and curry leaves and turn off heat.

Method

Dry roast the oats on a medium flame till they crisp up [like 3-5 mins] Let it cool, now make a coarse powder of it and set aside.

Dry roast the semolina till golden brown and set aside.

Grease the idli moulds and keep it ready.

In a blender, make a coarse paste of ash gourd, green chilis and ginger with greek yogurt.

In a big mixing bowl, mix the oats, semolina, almond meal, greek yogurt n ash gourd paste, salt, shredded carrots and dill and mix well adding required amount of water till it comes to idli batter consistency [it should be a little thicker than the pancake batter]

Add the seasoning and baking soda to it and mix till well combined. Now add a big spoonful of this batter to the greased idli moulds and steam cook it for 10-12 mins.

Serve  hot with your favorite chutneys!!
