This is one of my favorite salads ever…. Its my kind of healthy indulgence!!! Give it a try
Ingredients
Kale- 1 bunch[Trimmed and Chopped]
Red Bell Pepper-1 [Diced]
Carrots-1 Cup [Julienned]
Purple Cabbage-1/2 head [Sliced]
Broccoli Florets- 1 cup [Chopped]
Chick Peas- 1 can [Drained and Rinsed]
Peanuts-1/2 cup [Roasted]
Dressing
Lime Juice-4 tbsp
Olive oil-1 tbsp
Dijon Mustard- 1 tbsp
Sal to taste
Pepper-1/2 tsp
Garlic- 1/2 tsp [minced]
Honey-1/2 tsp
Method
Whisk all the ingredients needed for dressing till well combined and let it refrigerate.
In a large mixing bowl add all the salad ingredients [except peanuts] and give it a toss. Add, the dressing and gently mix.Top it with the crunchy peanuts and serve.
Note: You can swap peanuts with roasted cashews or pecans.
