Fruit and Nut Breakfast Loaf

Ingredients

Quinoa Flour-3/4 cup

Baking soda-1/4 tsp

Baking soda-1/4 tsp

Salt-1/2 tsp

Vanilla extract-1 tsp

Chopped Nuts-3 cups [Walnuts, Almonds, Pecans & Hazelnuts]

Chopped dry fruits-3 cups [Cranberries, Rasins, Dates, Figs & Blueberries]

Honey-2 tbsp

Eggs-3

Method

Preheat the oven to 350 degree F. Line a loaf pan with parchment and keep ready.

In a large bowl, mix together the quinoa flour,baking soda, baking powder and salt. Stir in the chopped dry fruits and nuts and mix till all the fruit and nut mixture is well coated with the flour.

In a separate bowl, beat the eggs, vanilla and honey together for 5 minutes using an electric hand mixer or a whisk.

Add the egg mixture to the dry ingredients and mix until everything is well combined. Pour the thick batter to the prepared pan and press it to fill the pan evenly.

Bake it for 40-50 minutes or until the top is golden brown and has pulled away from the sides of the pan. Remove and let it rest for a couple minutes. Remove from the pan and let it completely cool on the cooling rack. Cut it into thin slices and store it in an airtight container. Enjoy with your morning coffee/green tea!!
