Oats Quinoa & Coconut Bread

I simply love the soul-satisfying smell of bread baking in my oven!! This is easy, healthy and requires no kneading (I’m not a fan of kneading).This simple recipe will help you enjoy freshly baked bread anytime. Serve this lovely loaf fresh from the oven with soups and stews, as toast and even as a nourishing snack between-meals.

Ingredients

Cooked Quinoa-1 cup

Bananas-3 [ripe]

Coconut oil-1/4 cup[melted]

Quinoa Flour-1 cup [I used Bob’s Redmill quinoa flour]

Rolled Oats-1 cup

Coconut Flakes-1/2 cup

Flax Meal-3 tbsp

Cinnamon powder-1/2 tsp

Almond Milk-1/4 cup[unsweetened]

Liquid Stevia-2 drops

Baking Soda-1/8 tsp

Salt to taste

Method

Spray your loaf pan [I used a round cake pan]with baking spray and set aside. Pre heat the oven to 350

In your food processor puree the bananas then add oil and liquid stevia and pour it into a bowl and set aside.

In a separate bowl add all the dry ingredients, your flour, oats, soda, cinnamon, salt, coconut, flax and cooked quinoa. Whisk to combine & add that into your wet ingredient bowl.  Add your milk. Mix well to combine.

Add the batter to the prepared pan. I sprinkled the top with coconut flakes and oats. Bake for 50 minutes or until a toothpick comes out clean. Let cool completely before slicing.
