Poached Flounder

Fish is one of my favorite protein and omega rich food and I make it atleast twice a week. I try to cook it in so many different ways and always like to keep the seasoning to a minimal and therefore highlight the mild taste of the fish itself.

Today I shallow poached the flounder [This recipe works well with any white fish like tilapia & halibut] and it was an instant hit with my four year old twins.

I served it with a side of steamed Broccoli and to soak up all the yummy juices added a slice of homemade Quinoa Bread [ will post the recipe soon]

Ingredients

Flounder-16 oz [cut into 4 oz pcs]

Olive oil-1 tsp

Garlic-1 pod[crushed]

Shallots-2 tbsp[diced fine]

Italian seasoning-1 tsp

Pepper powder-1/2 tsp

Salt to taste

Lemon juice-1 tsp

Freshly squeezed Orange juice-1/4 cup

Water-1/2 cup

Method

Heat olive oil in a sauce pan, add shallots and garlic and let it turn translucent.Now add the orange juice, salt & pepper, Italian seasoning and water and let it come to a boil.Reduce the heat and let the liquid simmer on medium low for a min. Gently add in the fish pieces and cover it with parchment paper and then cover with a lid.Let it simmer for 6-8 mins and turn off heat.

Carefully take the fish out with a slotted spoon on to a serving platter. Let the remaining poaching liquid simmer till it becomes a little thick and turn off heat. Drizzle a spoonful of the reduced sauce on the fish and dig in!!Delicious!!
