Ingredients
Idli
Quinoa-2 cups
Idli Rice-1 Cup
Urad Dal-3/4 cup
Thick Poha-1 cup
Salt to Taste
Method
Clean and rinse all the ingredients separately till the water runs clear.Soak all the ingredients separately for four hours.
First blend the urad dal into a fine paste.Then blend quinoa and poha to a fine paste adding enough water.Now blend rice into a coarse paste and combine all the ingredients together and mix really well.Let the batter ferment overnight and pour it into idli moulds and steam cook for 10 mins.
Sambar
Toor Dal-1 cup
Tomatoes-1 cup[Chopped]
Sambar Powder-1 tbsp
Onion-1/4 cup [Sliced]
Garlic-1 clove
Green chilis-2 slit
Seasoning
Ghee-1 tbsp
Mustard seeds-1/2 tsp
Cumin-1/2 tsp
Curry leaves-2 sprigs
Asafetida-1 pinch
Red chilis-2
Onions -1/4 cup[sliced]
Garnish
Cilantro-2 tsp
Fresh coconut-2 tbsp[grated]
Ghee-1 tsp.
Method
Pressure cook Toor dal with all the ingredients[ except salt] for 2 whistles.
Heat the ghee and add mustard seeds and let it splutter and then add jeera and let it crackle.Now ass the curry leaves, asafetida, red chilis and onions and fry till the onions are translucent. Now add the cooked toor dal mixture into the pot and mix.Add in the salt and bring it to a boil and turn off heat. Garnish with cilantro and fresh grated coconut.

Note: Its important to rinse all the ingredients till the water runs clear to get white and fluffy idli.
