This is one of my favorite recipes, very simple and easy to make with a ton of flavor to satisfy your tastebuds!! L❤️ve this combination of Jerra rice/quinoa with egg masala. This one always scores BIG with my family😊😊
Ingredients For Jeera Rice
Quinoa-1 cup
Basmati Rice-1 cup
Green Chilis-5 [slit]
Ginger Garlic Paste-1 tbsp
Red Onions- 3 [thinly sliced]
Turmeric-1/4 tsp
Bay Leaves-2
Cardamom-3
Cloves-4
Cinnamon-2″
Jeera-1 1/2 tsp
Aniseed-1
Coconut Milk-1 cup
Hot Water-2 1/2 cups
Extra Virgin Olive Oil-2 tbsp
Ghee-2 tbsp
Salt-to taste
Method
Heat ghee and oil and add bay leaves, cinnamon, cloves, cardamom, aniseed and jeera and let it slightly change color. Add the thinly sliced onions, green chilis and ginger garlic paste and salt, fry till the onions turn translucent. Now add the rinsed and drained quinoa and rice to it and fry for 5 mins. Now, add the coconut milk and hot water and mix. Let everything come to a boil, then cover the pot with a tight lid and cook on medium flame for 10 mins and then 10 more mins on low flame and then turn off heat. Don’t open the lid, let it rest for 20 mins with the lid on. Now enjoy it with the egg Masala.
Ingredients For Egg Masala
Onions-2 [thinly sliced]
Tomatoes-2 [diced]
Ginger Garlic Paste-1 tsp
Curry Leaves-1 sprig
Red Chili Powder-1 tsp
Coriander Powder-1 tsp
Cumin Powder-1/4 tsp
Pepper Powder-1/2 tsp
Cinnamon Powder-1/2 tsp
Turmeric-1/4 tsp
Salt to taste
Oil-2 tbsp
Boiled and Peeled Eggs-8 [ make 3 slits on each egg]
Coconut Milk-1 cup
Water-1/2 cup
Method
Heat the oil, add onions, tomatoes, ginger garlic paste and cry leaves and let fry for 8 to 10 mins or till the oil separates. Now add all the powders to it and fry for 2 mins. Add the coconut milk, water and salt and cook for 2 mins. Now add the boiled eggs to it and let it simmer for 10 mins.
Enjoy as a side with Jeera Rice or any other Indian bread.
