My twins wanted to eat Chocolate Chip cookies and I got to work right away with loads of help from my little helpers ( wanted to try a recipe that I had in mind for a long time) . I’m happy how they turned out…. Soft, chewy and Yummy😋😋 The girls simply loved them!!
Ingredients
Quinoa Flour- 1 cup
Oats Flour-1 cup
Baking Soda-1 tsp
Sea Salt-1/4 tsp
Coconut Oil-2/3 cup( melted and cooled)
Brown Sugar-3/4 cup
Egg-1
Egg Yolk-1
Vanilla-1 tsp
Dark Chocolate Chips-1 cup
Dessicated Coconut-1 tbsp
Method
Preheat oven to 350 degrees F.
In large bowl whisk together quinoa flour, oats flour,baking soda, and salt; set aside.
In bowl of an electric mixer beat together melted coconut oil and brown sugar until smooth. Add in egg, egg yolk, and vanilla; beat again for 2 minutes or until smooth and creamy.
Add in flour & dry coconut and mix on low speed until just combined. Slowly add in chocolate chips.
Roll dough into 1 inch balls and place on cookie sheet leaving 2 inches apart. Bake 8-10 minutes or until edges just being to turn a golden brown.
