Quinoa & Lentils Soup

Ingredients

Quinoa-1 cup

Lentils-1 cup

Organic Crushed Tomatoes- 1 1/2 cups

Chicken Stock-2 cups

Kale Leaves- 2 cups

Salt to taste

Bay leaves-2

Water-4 cups

Sweet Potatoes- 1 cup cubed

Garlic- 1 tsp crushed

Garam Masala-1/4 tsp

Ground Cumin -1/4 tsp

Chilli flakes-1 tsp

Olive Oil-1 tsp

Shredded cooked chicken breast-1 cup

Method

Clean and wash Quinoa and lentils till the water runs clear. Now add all the ingredients to the slow cooker (except for kale and chicken) and mix well and let it cook for 8 hrs(don’t forget to give it a stir a couple of times). Turn off the slow cooker.Add the kale leaves and shredded chicken and let it sit for 10 mins.

Now serve it hot with a squeeze of lemon juice and a slice of  lemon!! Enjoy!!
