Ragi/ Finger Millet Idli

Ingredients

Idli Rice- 1 cup

Quinoa-1/2 cup

Ragi flour-1 1/2 cup

Urad daal-3/4 cup

Poha-1/4 cup

Salt to taste

Oil-1 tsp

Method

Soak the idli rice, quinoa, urad daal and poha seperately for 4 hrs.

Grind the urad daal  adding little water at a time till it becomes a smooth and fluffy and set aside . Grind the rice, quinoa and poha to the idli batter consisitensy and add it to the urad daal mixture and add the ragi flour to the batter and mix well till everything is combined and you should see lot of air bubbles in the batter. Add water as required so that the batter is not too thick or thin. Make sure there are no flour lumps in the batter. Let it ferment for atleast 6-8 hrs or you can leave it overnight.

Grease the idli moulds with little oil and pour the batter to it and steam the idli for12-13 mins. Enjoy with your favorite sambar and chutney.
