One of my favourite shrimp recipes-so flavorful, so spicy and so easy to put together.
Ingredients
Shrimp-1 lb [De veined & cleaned]
Onions-1 big finely chopped
Tomatoes-2 big finely chopped
Ginger garlic paste-1 tsp
Garlic-3pods crushed
Green chilis-3 slit
Curry leaves-1 sprig
Sauf/Fennel seeds-1/2 tsp
Oil-2 tbsp
Ghee-2 tsp
Turmeric-1/4 tsp
Red chili powder-1/2 tsp
Spanish paprika-1 tsp
Coriander powder-1/2 tsp
Cumin powder-1/4 tsp
Garam masala powder-1/2 tsp
Coconut milk-1/2 cup
Water-1/2 cup
Cilantro-2 tsp chopped
Lemon juice-2 tsp
Salt to taste
Method
Marinate cleaned shrimp with some salt, turmeric, lemon juice and red chili powder and set aside for at least 20 mins.
Heat oil in a flat skillet, lay the marinated shrimp in an even layer and cook each side for 2 mins, remove from pan and set aside.
To the same skillet, add the ghee and once heated, add the fennel seeds and let it turn golden brown. Now, add the crushed garlic pods and fry for 1 min. Add the green chilis, curry leaves and ginger garlic paste and fry for 1 min. Add the chopped onions and fry till they are golden brown. Now, add the tomatoes and cook till they are soft. Add all the powders and salt, cover and cook for 2 mins on a medium flame.Add water to it and bring it to a boil, now add the coconut milk and mix. Add the cooked shrimp to it and cook for an additional 2 mins to till the shrimp is curled. Turn off heat.Add lemon juice and gently mix till everything is well combined. Remove to a serving dish, garnish with chopped cilantro and serve as a side dish with chapattis or dosas.
