Almond Coconut Sugar Cookies

Holiday season calls for a lot of fun baking in our kitchen with loads of help from two pairs of little hands.My twins always volunteer to help me out when baking and watching them do their thing is the most wonderful feeling ever!!

Ingredients

Almond flour-2 cups

Coconut flour-3/4 cup

Coconut oil-1/4 cup

Ghee-1/2 cup

Coconut palm sugar-1/4 cup

Liquid stevia-2 to 3 drops

Vanilla extract-2 tsp

Eggs-2

Baking soda-1/2 tsp

Sea salt-1/2 tsp

Method

Combine all the dry ingredients together [except sugar] and sift it to get rid of any lumps and keep it aside.

Beat the eggs and sugar together in a stand mixer,slowly add ghee and coconut oil & vanilla+stevia [you can omit stevia and add  1/4 cup of sugar extra] to it and beat till the mixture is well combined.

Add the dry ingredients to the wet mixture little by little and mix till everything is well combined and forms a nice dough. Wrap the dough in parchment paper and let it refrigerate for one hour.

Pre heat the oven to 350.Line the baking sheet with parchment paper and set aside.

Make lemon sized balls of the cold dough,roll them into circles[they must be thick] top them with your favorite sprinkles or colored sugar and gently press.

Place the rolled cookie dough on the baking sheet and let it bake for 12-14 mins until they are lightly golden brown.
