This is one hearty & healthy salad that is simple & satisfying.
Ingredients
Wheatberries-1/2 cup cooked
Quinoa-1/2 cup cooked
Currants-2 tbsp
Lettuce-1 cup shredded
Red Bell Peppers- 1/4 cup chopped
Sliced Almonds-1 tbsp
Dressing
Extra Virgin Olive Oil-1 tsp
Lime Juice-1 tsp
Honey-1/2 tsp
Salt to taste
Chilli flakes to taste
Mix everything till well combined & set aside.
Method
Soak the wheat berries overnight. This will help speed up the cooking process.
Cook both wheat berries and quinoa separately with a pinch of salt and olive oil.Make sure they are crunchy and not soft and mushy.Let them completely cool off before adding them to the salad.
Gently toss all the salad ingredients together with the dressing and serve immediately.
