Beans & Pineapple Salad

A little bit of sunshine makes you so happy!!  Today was one such day and this made me fix myself a simple but hearty & healthy salad for lunch. Love how flavorful and filling this one is!!

Ingredients

Organic Cannelloni Beans- 1 can [15 oz]

Organic Kidney Beans- 1 can[ 15 oz]

Organic Garbanzo beans- 1 can[15 oz]

Red Onions- 1 diced

Red Bell Pepper- 1 diced

Pineapple- 2 cups diced

Cucumber- 1 cup diced

Cilantro-2 tbsp chopped

Dressing

Freshly squeezed lemon juice-1/4 cup

Cilantro-1/4 cup finely chopped

Olive oil-4 tbsp

Jalapeno-1 seeded and finely chopped

Salt to taste

Pepper Powder-1 tsp

Cumin Powder-1/4 tsp

Whisk everything together and set aside.

Method

Rinse and drain all the beans and add it to the mixing bowl. Now add the pineapple, bell pepper,cucumber and red onions and give it a toss. Add the chopped cilantro and toss again.

Drizzle the dressing on top and mix well till the beans and veggies are coated in the dressing.Refrigerate for atleast one hour before serving so that the salad soaks up all the dressing well. ENJOY!
