Edamame Noodle Salad

Love this simple, flavorful and satisfying bowl of yummy goodness with super crunch in every bite. Almond Mint pesto just makes it taste super delicious!

Ingredients

Edamame noodles- 1 pack

Salt to taste

Olive oil-1 tsp

Red bell peppers-2 [thinly sliced]

Green bell peppers-2 [thinly sliced]

Lemon Juice

Pesto

Mint leaves-1/2 cup

Cilantro-1/2 cup

Almonds-1/2 cup

Green chilis-8

Garlic pods-4

Olive oil-1/4 cup

Salt to taste

In a food processor, make a coarse puree of all the ingredients adding a few teaspoons of oil at a time.

Method

Cook the edamame noodles according to the package instructions, strain and set aside.

Thinly slice the bell peppers and put it to a bowl of ice water so that the bell peppers retain their crunch.

In a large mixing bowl, add the pesto, salt, olive oil, pesto, lemon juice and mix. Now add the warm noodles and mix till everything is well combined. Add the crunchy bell peppers to it and toss.

Serve it immediately.
