Ube & Almond Delight

Ube or purple yams are an excellent source of Vitamins, minerals and antioxidants and what I love the most about this root vegetable is the pretty purple color.

This is a figure friendly no bake dessert which is easy to make and yummy to eat! Your guests will love it too.

Ingredients

For the crust

Almond Meal-1 cup

Vanilla extract- 1/4 tsp

Avacodo oil-2 tsp

Combine everything together till it comes to a dough consistency and set aside.

For the filling

Ube-1 lb

Maple syrup-1 tbsp

Cinnamon powder-1/4 tsp

Black berries-1/2 cup

Dry coconut-1 tbsp

For the topping

Black berries-1/2 cup

Almonds-1/4 cup

Dry coconut-1 tsp

Method

Peel and cube the ube and set aside. Bring 6 cups of water to a boil with a pinch of salt and add the ube pieces to it and let it simmer till the ube is soft. Strain the ube pieces from water and set aside to cool.

Line a pie dish with parchment paper, spread the doughy crust evenly and put it in the freezer for 1/2 hour to set.

Add all the filling ingredients to a mixing bowl and using a hand blender make a smooth puree and set aside.

Take the pie dish out of the freezer and pour the filling into the pie dish, add the toppings and let it set in the freezer overnight.

Serving: Take the pie out of the dish and carefully remove the parchment. Place the pie on the serving platter and let it come to room temperature before serving.
