Mexican Salad

Perfect Lunch!! Love all the vibrant colors in one bowl. A perfect blend of all the fresh crisp and crunchy  veggies in one big bowl is soul satisfying.

Ingredients

Lettuce- 1 cup [shredded]

Red Onion-1 [sliced]

Corn Kernels-1/2 cup [ steam cooked]

Avocado- 1 [cubed]

Orange Bell Pepper- 1 [diced]

Cherry Tomatoes-1 cup [quarted]

Cucumber- 1/2 cup [chopped]

Cilantro-1 tbsp [chopped]

Black Beans-1 cup cooked

Banana Peppers- 2 tbsp [sliced]

Fresh Salsa

Tomatoes- 2

Jalapeno-1

Garlic-2 cloves

Shallot-1 small

Cumin-1/2 tsp

Salt to taste

Cilantro- 2 sprigs.

Garnish

Green Onions- 1 bunch [chopped]

Cilantro- 1 tbsp [chopped]

Lime Juice- 1 tsp

Method

Coarsely grind all the ingredients for salsa and keep aside.

Whisk all the ingredients for dressing together and set aside.

Take a large glass bowl and start layering the veggies one by one. Top it with fresh salsa and chopped cilantro.

All the chopping and slicing is worth it in the end. This salad is sure to win loads of appreciation from your guests. Enjoy!! I also added some olives to this recipe this time..its totally up to you.
