Oats and Quinoa Masala Idli

My girls always enjoy Idli & Dosa, I just wanted to make it much more colorful by topping it with their favorite veggies!! It was a big hit, they devoured them with some ghee on the side. I’m super excited to share the recipe here!! Enjoy!!

Ingredients

Oats- 1.5 cups

Quinoa- 1.5 cups

Urad Dal-3/4 cup

Thick Poha-1/4 cup

Salt to taste

Veggie Masala

Oil-1 tsp

Mustard seeds-1/4 tsp

Curry leaves-1 sprig [finely chopped]

Onion-1/2 chopped

Carrots-1 cup diced

Dill leaves-1/2 cup chopped

Green Peas-1/2 cup

Coconut Pieces-2 tbsp

Salt to taste

Heat oil in a pan, add the mustard seeds and let it splutter. Add the curry leaves,onion and saute for 2 mins, now add the remaining ingredients one by one in the given order and fry for 2 more mins. Set aside and let it cool.

Method

Soak the oats, quinoa, urad dal and poha seperately for 4 hours.

Blend the urad dal first till its smooth and fluffy.Then blend the rest of the ingredients together and mix it with the fluffy urad dal mixture and combine together.Now let it ferment for 6-8 hrs or overnight.

Grease the idli moulds and add a spoonful of idli batter to it and top it with the veggie masala and steam it for 12-13 mins.

Serve it with coconut chutney & ghee.
