Protein Cupcakes

This one is a guilt free easy n tasty breakfast recipe that whips up in few minutes and packs in a ton of yummy n healthy ingredients. I usually make one  big batch and put it in the refrigerator ( you can also freeze them) and heat it up for 30sec and enjoy it with my morning coffee.

Ingredients

Dry

Peanut butter protein powder-1/2 cup

Chocolate protein powder-1/2 cup

Vegan protein powder-1/2 cup

Chia seeds-2 tbsp

Cocoa powder-1/4 cup

Dark chocolate chips-1/2 cup

Mixed nuts-1/4 cup [Almonds, pecans, walnuts, pistachios]

Baking soda-1/2 tsp

Wet

Dates syrup-2 tbsp

Coconut oil-2 tbsp

Almond milk-1/2 cup

Banana-3 mashed

Eggs-2

Method

This recipe yields 12 cupcakes!

Pre heat the oven to 360 degrees.

Line the muffin pan with liners and keep ready.

Mix all the protein powders, baking soda ,chia seeds, chocolate chips and mixed nuts together and set aside.

Mix the mashed banana, almond milk, coconut oil and dates syrup together. Now, add the dry ingredients little by little and mix till everything is well combined.

Scoop a big spoonful of the batter into the lined muffin pan [top it with more chia seeds if you like] and bake in the preheated oven for 15-18 mins.

Let them cool completely and store in an airtight container.
