I fixed this simple salad after an overload of food from the last two days [Birthday weekend indulgence] Its a super easy recipe with only four ingredients [+ dressing ] packs a punch of flavor. Loved it!!
Ingredients
Kale- 1 cup [Rinsed and drained]
Carrots-1/4 cup [Julienned]
Slivered Almonds-2 tsp
Cranberries-1 tbsp
Dressing
Balsamic Vinegar-1 tbsp
Lemon Juice-1 tsp
Grape-seed oil-1 tsp
Salt to taste
Pepper powder-1/4 tsp
Honey-1/2 tsp [optional]
Method
Whisk all the dressing ingredients together and set aside for 10 mins for the flavors to gel.
Layer the serving plate with kale, carrots and cranberries.Add the dressing and top it with slivered almonds [walnuts are a good alternate too].Enjoy!!
