Brittle or the traditional Peanut chikki is one of my fav snacks. They bring back so many memories from my school days…we always had them at home and was often shared with family and friends as an accompaniment with evening snacks and coffee.I have been craving these for a long time and as a Bdae treat to myself, made these coconut, seeds and nuts brittle with molasses and they turned out perfect being mildly sweet, crunchy and delicious!!
Ingredients
Dry Coconut slices-1/2 cup ( unsweetened )
Sesame Seeds-2 tbsp
Cia Seeds-4 tbsp
Hemp Seeds-2 tbsp
Sunflower Seeds-2 tbsp
Pistachios-2 tbsp( crushed)
Peanuts- 1/4 cup( crushed)
Flax Seeds- 2 tbsp
Molassess-1/4 cup
Jaggery-4 tbsp
Water-4 tbsp
Method
Dry roast all the nuts and seeds till golden brown and add the coconut slices and roast for 2 mins and keep aside.
Line a baking sheet with parchment paper and set aside.
Heat a heavy bottom pan and add jaggery, molasses ( I used Cooking Molasses)and water and keep stirring constantly till you get a one string consistency syrup. Now, add all the dry roasted ingredients to the boiling syrup and gently mix and let it cook for 2 mins and turn off heat and transfer the mixture to the lined baking sheet and pat it to form an even layer. Let it completely cool. Now brake them into pieces and store it in an airtight glass container.
