Lentil & Quinoa Stuffed Zucchini

Ingredients

Zucchini-1 [ slit into half and cored]

Cooked Lentils-4 tbsp

Cooked Quinoa- 4 tbsp

Tomatoes-1 cup [chopped]

Garam Masala-1/4 tsp

Chili Powder-1/2 tsp

Mint leaves-1 tbsp [chopped]

Parsley- 1 tbsp [chopped]

Salt to taste

Olive Oil-1 tsp

Lime Juice-1 tsp

Mexican cheese blend-2 tsp

Method

To make Stuffing: In a mixing bowl add the cooked lentils [ I soak the lentils overnight and then pressure cook them for one whistle with a pinch of salt] cooked quinoa [ cook according to package instructions] tomatoes, chili powder, salt, garam masala, little mint and parsley and mix well and set aside.

On a baking dish place the cored zucchini and fill it with the mixed stuffing, top it with cheese and sprinkle remaining parsley and mint. Bake it in a 350 degree oven for 20 mins. Enjoy!!
