Spicy Quinoa & Finger Millet Biscuits.

I was craving for the famous Iyengar Bakery Khara Biscuits today and wanted to try and make it using the non traditional ingredients like Quinoa and Ragi also called Finger Millet [Traditionally these biscuits are made using all purpose flour and loads of butter] This version of my favorite cookies turned out pretty good and I know for sure I’m going to make it a regular in my kitchen.

Ingredients

Quinoa Flour-1 cup

Finger Millet Flour-3/4 cup

Salt-1/2 tsp

Cumin Seeds-1/2 tsp

Sesame Seeds-1 tbsp

Desiccated Coconut-1 tbsp

Butter Milk-4 tsp

Ghee-1 tsp

Baking Soda-1/4 tsp

Make Coarse Powder

Green Chilis-4

Red Chilis-2

Peanuts-2 tbsp

Curry Leaves-1 sprig

Shallot-1 small

Cilantro-1/4 cup

Mint-1 tsp

Method

Sift the flours, salt and baking soda together.Now, add cumin seeds, sesame seeds, desiccated coconut and mix. Add the coarsely ground powder, ghee and buttermilk and mix well and set the dough aside for 10 mins.

Preheat the oven to 350 degree F

Divide the dough into small key lime size balls and flatten it between your palms [I like the slight cracks on the edges as they get extra crispy] and place it on a baking sheet and bake for 20-22 mins.If the biscuits feel a little soft then bake them for 5 more mins till they are light brown and crispy. Enjoy as a snack with your evening Tea or Coffee!!
