Barley & Wheat Pongal

Ingredients

Bulgar Wheat-1 cup

Barley-1 cup

Mung Dal-1 1/4 cup

Turmeric-1/4 tsp

Green Chillies-2

Grated Ginger-1/2 tsp

Salt to taste

Seasoning

Ghee-1 tsp

Cumin-1 tsp

Crushed Pepper-1 tsp

Green Chilis- 2 slit

Curry Leaves-1 sprig

Onions-1/2 cup sliced

Asafoetida- 1/4 tsp

Cashews-2 tbsp

Grated coconut-2 tbsp

Cilantro-1 tsp

Olive oil-2 tsp

Method

Dry roast the mung dal till golden brown and set aside.

Wash wheat,barley and mung dal till the water runs clear.

Pressure cook wheat barley and dal with crushed ginger, 2 green chilies salt and a pinch of turmeric for 2 whistles.

Heat oil and Add cumin seed and let it splutter. Now add the cashews, Asafoetida,slit green chilies, curry leaves & sliced onions and sauté it for 3 mins. Add crushed pepper and mix well. Add this seasoning mixture into the cooked wheat Barley and Dal and stir till well combined. Let it simmer on low flame for 2 mins and add ghee and coconut and turn off heat.

Garnish with Cilantro!

Serve it hot with coconut chutney!
