Fruit & Nut Bread

I have been busy baking goodies all weekend.Here is one of the recipes baked in my kitchen,Proudly presenting this tasty and healthy fruit and nut bread with out any added sweeteners. Love the taste and texture of this bread. It makes a perfectly satisfying snack with my afternoon green tea.

Ingredients

Almond Flour-1 cup

Coconut flour-1 cup

Baking powder-1 tsp

Salt-1/4 tsp

Coconut oil-1/4 cup melted

Eggs-2 large

Banana-2 pureed

Flax seeds- 1 tbsp

Chia seeds-1 tbsp

Hemp seeds-1 tbsp

Chopped Mixed nuts- 2 cups [ I used walnuts, pecans,almonds and pistachios]

Chopped Dry fruits- 1 1/2 cup [I used cranberries, raisins,dates, cherries and blueberries]

Method

Preheat the oven to 350 degrees

Line a baking dish or a loaf pan with parchment and set aside.

In a mixing bowl, whisk the eggs and oil together add the banana puree to it and whisk till everything is well combined and set aside the wet ingredients.

In another bowl,mix the almond flour,coconut flour, baking powder, salt together. Add in all the seeds, chopped nuts and chopped dry fruits and mix. Now add the wet ingredients to it and mix till everything is well combined.

Put the mix into a lined pan and bake till there is a light brown crust on top [35-40 mins] or till the toothpick comes off clean.

This stores well in the refregirator for a week when kept in an airtight container.
